I'm calling this little creation the Life is Good Panini. |
I used creamy Gouda cheese from Holland. The delicious Thomy mayonnaise tube was a gift from my son. |
Layer the cheese, tomato, and thinly sliced prosciutto on one side of the bread. Top with a second sliced of bread slathered with pesto and grill until golden. |
Life is Good Panini
Serves one birthday girl
2 slices good quality 12-grain bread ( I used the HEB bakery brand!)
Extra virgin olive oil
Prosciutto. thinly sliced
Mild cheese, such as Gouda, thinly sliced
2 small Campari tomatoes, sliced
Pesto
Salt and freshly ground pepper
Lightly brush or drizzle olive oil on one side of each slice of bread. Top one slice of bread with cheese and place in non-stick pan on medium heat to begin melting the cheese. Add Prosciutto slices, tomato slices, and a little salt and pepper. Spread pesto on remaining slice of bread and place on top. Cook until bread is golden and crispy on both sides, and cheese has melted. Serve warm.
